Happy almost weekend! It was a short week of cooking for one—I got back to the city on Monday and last night Matt arrived for his final visit to New York of the school year—so I didn’t stock up at the market (and by market I mean Trader Joe’s, but market sounds more chic).
Today’s things are three new meals I ate this week. Food has actually been the last thing on my mind this week with the semester’s end nearing. My capstone is due in less than two weeks, and I have a draft of a final paper due tonight at 11:59 p.m. Nevertheless, I prioritized feeding myself at least one home-cooked meal a day. Here’s how the best three turned out.
🍝 Pasta and veggies
I can’t take the credit for this one. It’s a recipe from one of my favorite food IGs, @whatchristineeatss. Topped with a heck of a lot of parm here, it’s a pasta full of some all-star ingredients (imo): chickpeas, sundried tomatoes, olives, and kale. Surprisingly, I haven’t been making a lot of pasta at home this school year, but this might become a staple meal during these final weeks of the semester my academic career.
🌮 Breakfast tacos
With sheer determination, anything can be a taco. I’m team corn tortilla, but if flour is more your fancy, do flour! Cheddar is a must in any egg situation, and you can never go wrong with salsa verde. Treated myself to some teeny tiny avocados this week—just hope I can finish them before they turn to mush.
🍔 Eggs on a brioche bun
C’mon, that just rolls off the tongue beautifully. Eggs on a brioche bun, you have my heart. No cheese on this one, just a lot of Hank Sauce and a teeny tiny avocado. I’m no stranger to making my own breakfast sandos at home, but a bun like this takes it to a whole other level. In the words of my mother:
